I’ll admit it, I’m a carb-aholic. Whenever I get in a mood, I always want chips or bread. Bread with pepperoni and cheese, bread with pasta, I really don’t care. I just really like carbs. Unfortunately, we always seem to have 1/2 a loaf of leftover bread. This Savory Bacon Mushroom Strata (Bread Pudding) is a great way to bring that left-over loaf to life.
A strata is just a layered casserole. This one is particularly tasty because it has bacon, mushrooms and spinach in it. It’s a great combination of ingredients. Of course, the best part is that it’s easy to put together and can be made days in advance.
A couple of weeks ago I posted about reducing food waste. Another way to do that is to make use of leftovers. In this case the half loaf of leftover bread. I’m particularly bad when it comes to bread. Unless it’s garlic bread I just don’t seem to finish the loaf in one night (I know I’m horrible). But I’m a firm believer in “Waste not want not” so I always try not to waste food.
This is a very delicious way to make use of left-overs. Most strata include cheese but it’s really not necessary. Especially, if you’re adding bacon. My suggestion is to use whatever is in your house. Swap ham for bacon or kale for spinach. Do what works for you.
Savory Bacon Mushroom Bread Pudding
Makes 6 servings
- 2 tablespoons butter
- 1 medium onion (chopped)
- 8 ounces mushrooms (sliced)
- 10 ounces spinach
- salt and pepper to taste
- 5 eggs
- 1 cup of milk
- 1/2 loaf stale bread (cubed)
- 8 ounces bacon (cooked & chopped)
- 1/2 cup shredded cheese (optional)
- 1/4 cup green onions (chopped)(optional)
Tools: skillet, large bowl, baking dish
Pre-heat oven to 375 degrees Fahrenheit.
Grease a 8 x8 glass baking dish with cooking spray.
In a large skillet over medium high heat melt butter.
Add onion and mushrooms to skillet and cook until soft.
Add spinach and mix well.
Season with salt and pepper.
In a large bowl combine eggs and milk.
Toss bread in egg/milk mixture.
Spread bread on the bottom of baking dish
Add a layer of vegetable mixture.
Repeat until bread and vegetable mixture is finished.
Pour remaining egg mixture over strata and top with bacon and cheese.
Bake until strata is set approximately 45 minutes.
Top with chopped green onions, cut into squares and serve hot.
