Don’t you love recipes that are super simple and quick and delicious. This is a weeknight I love for the family because it’s a complete meal. It’s got carbs, veggies, protein and omega-3 fatty acids. The littles love noodles so it’s perfect the perfect vehicle for all of the different veggies I love to add.

For this recipe, I’ve added some of our favorite veggies but feel free to use whatever vegetables you like. This sesame rice noodles with shrimp recipe is also delicious with snow peas and red peppers. If you like spice, go ahead and add some thin slice of fresh jalapeno peppers. That’ll really give it a kick.

The ingredients in this recipe are perfect for when you are trying to get a delicious meal on the table quickly. Shrimp will defrost very easily in a bowl of cool water. It’s actually how you should defrost your shrimp. And rice noodles cook really fast. Literally, it takes more time to boil the water for the noodles then it takes to cook the noodles. But that’s great because you can chop up veggies or make a fun drink while you are waiting for the water to boil.

Oh, and one other great thing rice noodles are gluten-free. So, it’s also perfect if there are members of your family that are gluten-free.

Tip:

If you don’t have a julienne peeler, mandoline or spiralizer you can always use the large side of your grater to make thin strips of carrots and cucumbers.

Ingredients

  • 1/4 cup soy sauce tamari (gluten free)
  • 1/4 cup rice vinegar reserve 3 tablespoon
  • 3 tablespoons sesame oil reserve 1 tablespoon
  • 2 garlic cloves minced
  • 2 teaspoons honey
  • 1 cup cucmbers peeled, seeded & julienned
  • 1 cup carrots julienned
  • 1/2 cup cabbage julienned
  • 2 scallions thinly sliced
  • 1 teaspoon salt
  • 1/2 pound rice noodles vermiceilli
  • 1/2 pound shrimp peeled & deveined
  • 1 teaspoon Chinese five spice optional
  • 1 teaspoon sesame seeds

Instructions

  • In a large bowl, whisk together soy (or tamari), vinegar, sesame oil, garlic and honey.
  • In a separate bowl, toss together cucumbers, carrots, cabbage and scallions with 3 tablespoons of vinegar and salt. Let mixture stand.
  • In another bowl, season shrimp with salt and Chinese 5 spice.
  • Bring a large pot of salted water to a boil. Cook spaghetti as directed on package until al dente. Drain rice noodles (vermicelli) in a strainer and add seasoned shrimp to the pot.
  • Add 1 tablespoon of sesame oil and cook shrimp for about 2 minutes until it begins to turn pink.
  • Add noodle mixture and vegetables to pot then pour mixture on top. Mix well then remove from heat and place in a serving bowl. Top with sesame seeds and fresh scallions.
