I love spinach and artichoke dip and stuffing this delicious dip into a chicken is drool-worthy. I am always looking for ways to entice my littles to eat spinach. When they were younger we didn’t have an issue but lately, they don’t like spinach. Sigh.

Luckily, they love spinach and artichoke dip. So making this Spinach and artichoke stuffed chicken thighs was a win win in our house. I was able to get the littles to eat their veggies and I got a super indulgent dinner that was really delicious and filling.

If you follow the blog you know I make spinach and artichoke dip for any event I possibly can. But it’s not something we eat on a regular basis. In the end, this seemed like a great way to change our typically baked chicken up a bit. It definitely adds more flavor overall to the dish.

By the way, this is an absolutely delicious main course to toss on the grill one summer evening. Just remember to make sure you fasten the chicken well with toothpicks.

Ingredients

Chicken Thighs

  • 2 pounds boneless chicken thighs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika

Spinach and Artichoke Filling

  • 8 ounces cream cheese
  • 1/2 teaspoon onion powder
  • 1 teaspoon oregano
  • 2 ounces mozzerralla cheese shredded
  • 4 ounces frozen spinach thawed and chopped
  • 2 ounces marinated artichokes chopped
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 375 degrees F.
  • Pat chicken dry and season well on both sides with salt and pepper. Set chicken aside.
  • In a medium bowl, place filling ingredients and mix well.
  • Place about 2 tablespoons of spinach mixture into each thigh and secure with toothpicks (at least 2 per thigh).
  • Add chicken thighs to a baking dish and cook for 45 minutes. Then remove from oven.

Recipe Note: If your chicken needs more color, turn oven to broil and cook for about 2 minutes or place chicken in a cast iron pan and sear chicken in butter after cooking.

    I served this to my littles with white rice and corn. If you are keeping the whole meal low carb you might want to use cauliflower rice.
