This Wild Mushroom Veggie Burger is a seriously good burger. It’s filling delicious and has patty you can sink your teeth into.
I’m in love this with Wild Mushroom Veggie Burger. Why? Because it’s a serious burger. I’m not going to go into the whole spiel of getting older and eating healthy because in the end I love tasty food. If it tastes good then I am all about it. On the other hand … I have noticed a bunch of my friends leaning toward a more vegetarian diet. I’m not going to say it’s because they are old (side eye) but because they are trying to be their best selves.
As someone who’s serious about supporting my friends the way they support me. I’ve been working on recipes that embrace vegetarian meals. We’re big friends of Meatless Monday so adding some more vegetarian and vegan dishes was a no brainer. Especially, super delicious indulgent dishes. Because that’s what a burger should be. A big bite of yum right?
To be honest, this burger is right up my alley. Because it’s delicious but also because I need to pack as many nutrients into each meal as possible. This crazy momma decided to sign up to run two half marathons this year. I know! I’m crazy! But it was my way of motivating myself to consistently workout every week and to run every week. Do you do that?
Scheduled something or plan something so that you are forced to do it? Sometimes that’s the only way to hold yourself accountable. The fear of dying while trying to run a half marathon is all the accountability I need. But I do they same thing when I think I need a mom’s night out. You do what you’ve got to do right?
But I digress. Whether you love meat or not you’ll like this burger. The mushrooms add that bite and meaty texture you want from a burger. The mushrooms stay firm and the combination of mushrooms, onions, garlic and absolutely delicious. Yup. That’s why this burger is soooo good. You know I am all about great tasting comfort food. So I stupid excited when I finally figured out this Wild Mushroom Veggie Burger recipe.
Best of all it takes about 15 minute make this burger from start to finish. Delicious, satisfying and quick. It’s a damn good Veggie Burger. Even the littles love it.
Wild Mushroom Veggie Burger
Makes 4 Burgers
- 1/4 cup onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 15 ounce can white beans, rinsed
- 1/4 panko bread crumbs
- 1 egg (1 flax egg)
Tools: stainless skillet, spatula, large bowl, medium bowl
Add 1 tablespoon olive oil in a pan over medium heat.
Add onion and mushrooms and cook for 2-3 minutes, just until mushrooms start to soften.
Remove from heat.
In a large bowl, add beans and lightly mash.
Stir in onion, garlic, soy sauce, sea salt, pepper, breadcrumbs and egg.
Divide mixture into 4 portions and shape into 1/2-inch thick patties.
Cook stove top over medium high heat for 8 minutes Flip after 4 minutes.
Serve on bun with lettuce, tomato and mayo. Yum.
